Ode To The Avocado

These are the favorite avocado recipes in my house…

Spiced Avocado Halves

Mix together your favorite spices in a small bowl.

I use garlic powder, onion powder, turmeric, red pepper flakes, coriander, salt & pepper.

Half and pit an avocado.

Sprinkle each half with your spice mixture to taste and serve immediately.

Grilled Cheese with Avocado

Make your grilled cheese as you normally would.

Consider adding sliced tomato and/or ham.

At the end when the grilled cheese is cooked to your liking, open it and add sliced avocado.

Avocado Toast

This is one of my absolute favorite things to do with avocado!

I make my favorite toast as I normally would (it’s delicious with or without your favorite butter).

Place a quarter of an avocado on each slice and then gently mash it with a fork.

This is such a satisfying breakfast that will keep you satiated for hours!!!

Add a quarter of an avocado to your favorite smoothie to make it nice and creamy!

Avocado Egg Boats

Half and pit an avocado.

Separate the yolk from the egg white, reserving the egg whites for later.

Place the yolk of the egg into the hole of the avocado where the pit was and add a little egg white at a time until the space is filled.

Careful not to add too much and have the egg white spill over.

Bake in the oven at 350 until the egg is set.

Salt & pepper to taste.

Hot sauce is suggested as well.

Avocado Popsicles (recipe by Nate Appleman)

Blend together 2 avocados, 1 can of coconut milk and the juice of 1 grapefruit.

Add honey to taste. (optional)

Pour into popsicle molds and freeze.

One of my absolute favorite avocado recipes is an Avocado Sauce that I serve over spaghetti squash or my favorite gluten free pasta…

Ingredients:

1 medium avocado, pitted

1-2 small cloves of garlic, to taste

1/8-1/4 c. fresh basil, to taste

The juice of half a lemon

½ tbsp. olive oil

Salt & pepper to taste

Blend all ingredients in your food processor or high powered blender adding 1 tablespoon of water at a time to aid in blending.

The sauce should be creamy, not watery.

Once the sauce is smooth and seasoned to your taste, use it to top your favorite pasta or spaghetti squash.

Massaged Kale Salad with Avocado

Gently massaging kale helps to wilt the leaves making it easier to chew and to digest.

It also removes a lot of the bitter taste that kale is infamous for and releases its sweetness, making it more pleasant to eat in a salad.

When making a salad with kale as my base I place my kale (washed and spun dry in my salad spinner) into a large bowl.

I drizzle it lightly with EVOO and sprinkle a little bit of pink Himalayan sea salt over it.

I then gently massage the kale until it starts to wilt down and turns a beautiful deep green.

I allow it to sit for about half an hour and then I go back and massage it once again.

This will keep in your fridge for days in an airtight container!!!

What I also like to do is add an avocado (or half, your choice) to the kale as I massage it.

The flavors blend and it creates a creamy texture that is delicious and requires no dressing.

Even with the avocado it will last days in the fridge in an airtight container.

Play around with it and get creative with what you add to your salad.

Some of my favorite things to add are English cucumber slices (skin left on only if organic), organic red pepper slices, black olives, shelled hemp seeds, sunflower seeds, pumpkin seeds, dried cranberries, artichoke hearts, hearts of palm, roasted chick peas…you get the idea!
