These savory pancakes are vegan and gluten free, a great source of protein and fiber and beyond delicious!
This recipe was born from an old *falafel recipe that I've played with over the years and made my own.
Ingredients for pancakes:
1 c. garbanzo bean flour
½ tsp sea salt
¼ tsp baking soda
I use the following seasonings roughly in these amounts (to taste):
1 – 1 ½ tsp parsley flakes
½ - ¾ tsp ground cumin
½ - ¾ tsp garlic powder
¼ - ½ tsp onion powder
¼ tsp chili powder if you want to spice them up
The juice of half of a small lemon
½ c hot water
Oil of your choice (I used coconut oil)…just enough to lightly coat the pan to prevent sticking.
(Yields 12-16 pancakes depending on size)
For the avocado cream:
1 avocado
1 tsp olive oil
2 tsp lemon
Fresh basil if desired
Dash of the following: garlic powder, onion powder, turmeric and sea salt (to taste)
Combine all dry ingredients in a bowl. Stir until mixed well. Add lemon and hot water and stir, scraping the sides of the bowl to make sure everything is well blended.
Batter will be light and fluffy.
Put the batter aside and allow to sit while you make avocado cream.
To make avocado cream blend all ingredients in a high powered blender or food
processor until you’ve achieved your desired smoothness. You can add a small amount of water if needed to help with blending.
Note: Today I didn’t want the olive oil or lemon in my avocado so I simply mashed an avocado in a bowl then added sea salt and my favorite savory spices to taste.
Heat oil in a pan on medium heat.
Add batter to the pan using a small spoonful for each pancake. I like mine to be slightly larger than a half dollar.
Cook on both sides until golden brown.
Add a dollop of the avocado cream.
I enjoy these best when served hot, however, I do leave them on the counter at room temperature and snack on them throughout the day.
I often eat them without the avocado. They are a great on the go meal or snack.
This is the basic recipe and it’s very versatile so you can spice it up and add to it however you’d like.
I like to add a small amount of minced garlic or sautéed onions and/or peppers to the batter when making them for dinner.
You can also throw a dash of ground black pepper on top of the avocado cream.
